I’ve only ‘canned’ boneless chicken breast so I don’t know about the dark meat. Wendy might, you can email her directly from her blog.
And no, you don’t add liquid to the chicken. I do add a little broth to the ground beef that I bottle. But that is a bit different as I precook that, before processing. For the raw pack, like the chicken, I don’t add liquid, the chicken has plenty of it’s own liquid.
